Chipotle Gouda Scalloped Sweet Potatoes

Ingredients
- 3 large sweet potatoes, sliced into 1/8th inch thick rounds
- 2 tbsp butter
- ⅓ cup flour
- 2 cups milk
- 12 oz smoked gouda
- 2-3 tbsp adobo sauce from chipotle chilies
- 4 cloves garlic, minced
- Salt and pepper
- Fresh parsley (optional)
Instructions
Preheat your oven to 375º F (190º C) and spray an 8x8 pan with cooking spray. Place your sliced sweet potatoes in three tight slanted rows but be sure to leave enough room for the sauce to flow between each slice.
Next make your sauce by adding butter to a pan over medium heat. Once melted, whisk in half the flour and cook for 10-20 seconds until a paste forms. Slowly add the milk and the rest of the flour while whisking. Once smooth, bring to a low simmer for 5-10 mins while stirring often until your sauce reaches a gravy-like consistency.
Turn off the heat and stir in 1 cup of gouda, garlic and chipotle sauce to taste. Season with salt and pepper. Pour your sauce evenly over the potatoes to cover them completely. Cover with foil and bake for 45 mins - 1 hour or until potatoes are fork tender. When done baking, remove foil and sprinkle remaining gouda on top. Broil or bake for 1-2 mins until the cheese is melted. Garnish with fresh parsley.
Honey Brown Sugar Roasted Carrots

Ingredients
- 2 lbs baby carrots or regular carrots cut into sticks
- 2 tbsp olive oil
- 4 tbsp butter
- 2 tbsp brown sugar
- 2 tbsp honey
- 1 tsp Italian seasoning
- 2 tbsp balsamic vinegar
- 1 tbsp garlic, minced
- Salt and pepper
Instructions
Preheat oven to 400º F (200º C) and prepare a large baking sheet with parchment paper or a silicone baking mat. Toss carrots in oil and season with salt and pepper to taste. Arrange in a single layer on the baking sheet.
Combine butter, sugar, honey, Italian seasoning, balsamic vinegar and garlic in a small saucepan and stir over medium high heat until melted and combined. Once mixture starts to boil, remove from heat and pour over carrots. Bake for 20 mins or until fork tender.
Oven Roasted Brussel Sprouts with Bacon

Ingredients
- 2 tbsp olive oil
- 6 cloves garlic, minced
- 2 tbsp whole grain mustard
- 2 tbsp honey
- 1 tsp smoked paprika
- Salt and pepper
Instructions
Preheat oven to 425º F (220º C) and line a baking sheet with parchment paper or silicone baking sheet. Trim brussel sprouts if needed and cut in half. Add to a large mixing bowl. Dice bacon and add to bowl.
In a separate small bowl, mix olive oil, garlic, mustard, honey, and paprika. Mix and add salt and pepper to taste. Add to bowl with brussel sprouts and mix until coated. Spread the mixture onto the prepared sheet and bake for 25-30 minutes or until brussel sprouts are tender and golden and bacon is crisp.
